Curried Veggies

This recipe is from Robb Wolf’s book The Paleo Solution and is a great way to get those veggies you know you should eat but never do… like spinach…

1 bag of frozen (or fresh!) veggies
1/2 12-16oz can of coconut milk
1 cup chicken or beef broth
1 6-12 oz can of salmon or 1lb meat of choice
1 tsp curry
1tsp cumin
1 tsp garlic powder

Lightly steam veggies until crisp but tender. Pour coconut milk into a saucepan and add veggies, meat and spices. Mix together and cook for 10 minutes to let flavor infuse.
