Grilled Chicken Breast with Apple Brandy Sauce
In saucepan, combine onion, garlic and apple juice and bring to a boil over medium heat. Reduce volume by three quarters.
Add cream and reduce by a half.
Press through fine sieve and add brandy and apples. Season with salt and pepper to taste.
Season chicken breasts with salt and pepper and grill on a BBQ or electric grill until juices run clear (approx 5 mins per side), don't over cook.
Serve with sauce.
